Comfort Soup - Garlicky Mushrooms and Bok Choy Ramen Soup

Full on fall is here in Minnesota… FINALLY. And after a long and hot summer, we were craving the cooler temperatures. And we all know what that means— cold days, cozy nights, changes in temperatures and, unfortunately, the sniffles. But fear not! I’ve got the perfect comfort food to keep you warm and give your body the nourishment it craves: Baby Bella, Garlic, and Bok Choy Soup. This simple yet hearty dish is not only delicious, but it’s also packed with goodness to help you feel better when those changing seasons colds start circulating. Let’s dive in!

Why This Soup is Perfect

This soup is an all-time favorite for a reason: it’s cozy, satisfying, and incredibly customizable. This version, loaded with baby bella mushrooms, garlic, and bok choy, is a game-changer for the colder months because of all the goodness in it:

GARLICKY MUSHROOMS and Bok Choy Ramen Soup Recipe

Ingredients:

  • 4-5 garlic cloves, sliced

  • 4-5 cups vegetable broth (or water with vegetable bouillon)

  • 1 lb bok choy, chopped (both leaves and stems)

  • 8 oz mushrooms, sliced (shiitake or cremini work well)

  • 1-inch piece of ginger, peeled and minced (optional, but adds a nice depth)

  • 1-2 tbsp soy sauce or tamari (for gluten-free option)

  • 1 tsp rice vinegar or lime juice (optional, for added brightness)

  • 1/4 tsp black pepper (or to taste)

  • 1/2 tsp red pepper flakes (optional, for a bit of heat)

  • 4 oz noodles of your choice (soba, rice noodles, ramen, or even rice vermicelli work well)

Instructions:

  1. Slice the garlic and ginger (if using), chop the bok choy, and slice the mushrooms.

  2. In a large pot, pour in the vegetable broth and bring it to a boil over medium-high heat.

  3. Once the broth is boiling, add the garlic and ginger. Lower the heat and simmer for 2-3 minutes to infuse the flavors.

  4. Stir in the mushrooms and simmer for 5-7 minutes, until the mushrooms soften.

  5. Add the bok choy and cook until it starts to wilt but still retains some texture.

  6. Add the soy sauce, rice vinegar or lime juice (if using), black pepper, and red pepper flakes (if using). Stir to combine.

  7. Taste the soup and adjust seasoning if needed. You can add more soy sauce, vinegar, or pepper depending on your preference.

  8. Ladle the soup into bowls and garnish with fresh cilantro or green onions if desired.

Notes:

  • To make it heartier: You can add some tofu cubes or a protein of choice, or serve it with a side of steamed rice or noodles.

  • For a more umami flavor: You could also add a splash of miso paste (dissolved in a bit of hot water before adding to the soup) or a small amount of nutritional yeast.
