Watermelon, Cucumber & Feta Salad
Ingredients
4 cups cubed watermelon
1 English cucumber, sliced
½ cup crumbled feta cheese
¼ cup thinly sliced red onion
2 tablespoons chopped fresh mint
2 tbsp olive oil
1 tbsp lemon or lime juice
Salt and pepper to taste— I love a flaky salt like Sal de Colima
Directions
Combine the watermelon, cucumber, feta, red onion, and mint in a large bowl. Drizzle with fresh lime juice and gently toss to combine. Chill for 15–30 minutes before serving.
